Aloo Bukhara Chutney: What It Is, How to Eat It and Price in Pakistan
Aloo bukhara chutney (آلو بخارا کی چٹنی) is a sweet, tangy chutney made from plums. “Aloo bukhara” is the Urdu name for plum, so you will also see it called plum chutney. It is a fixture at biryani spreads, weddings and Eid tables across Pakistan.
What does it taste like?
Sweet first, then a gentle sourness from the fruit, with warmth from spices. Good aloo bukhara chutney is thick and glossy, almost like jam, and a deep ruby red.

A simple home recipe
- Soak 250g dried aloo bukhara in warm water for 2 hours, then remove the seeds.
- Cook the plums with 1 cup sugar and 1 cup of the soaking water on low heat.
- Add 1/4 cup vinegar, 1 tsp red chilli flakes, 1/2 tsp salt and 1 tsp roasted cumin.
- Simmer for 20 to 25 minutes, stirring, until thick and glossy.
- Cool completely and store in a clean glass jar in the fridge.
