Jau Ka Atta (Barley Flour): What It Is and How to Use It

Jau ka atta is flour made from barley. In English it is simply called barley flour. It has been part of South Asian kitchens for centuries and is back in demand as people look for alternatives to plain wheat.

Why people use jau ka atta

  • Soluble fibre. Barley is rich in beta-glucan, a fibre that research links to healthier cholesterol levels as part of a balanced diet.
  • Keeps you full. The fibre slows digestion, which many people find helps with weight management.
  • Mild, nutty taste that suits roti and paratha.

Can you make roti with jau ka atta alone?

You can, but barley has much less gluten than wheat, so pure jau rotis crack and are hard to roll. Most families mix it with wheat atta. A common starting point is 1 part jau to 3 parts wheat, then adjust to taste.

Tips for soft rotis

  1. Use warm water and knead well.
  2. Rest the dough for at least 20 minutes.
  3. Roll between two sheets of plastic if it cracks.
  4. Cook on a hot tawa and eat fresh.

Jau ka atta or multigrain atta?

If you want barley on its own for a specific diet, jau ka atta is the direct choice.
